Pocket universes have not been shown to have any consistency in lifespan with some surviving many times longer than others. For example, the one in "Hide" survived for a few minutes while the one in "The Doctor's Wife" had lasted for enough years to have lured and trapped at least dozens of Time Lords and didn't collapse until House had left. Therefore, within our knowledge of pocket universes, there is no reason that the one in which Gallifrey was located, as seen in "The Day of the Doctor", can't have existed for many years.
