There is no indication that "The Stolen Earth" has been "unwritten". There is a wide-held misconception that the events of Series 5 deleted all past history of the franchise, but "The Big Bang" explicitly restores status quo. This has been confirmed in numerous episodes including "The Name of the Doctor" (where the events of "Forest of the Dead" are referenced), "Death of the Doctor" (Sarah Jane and Jo Grant remember events pre-Big Bang), and "The Day of the Doctor".
